Roasted Chicken Recipe

Yes, created that clever little joke, but this Roasted Chicken recipe is no joke at all! It’s so tender, delicious, and so chewy! There are so many times I have cooked fried chicken and it ends up either having no taste or rubbery. It’s just not my style. However, when I made this easy to make roast chicken recipe I knew right away it would be the best chicken dish I had ever made.

To make this chicken recipe you’ll need: A hot oven, a sauce of your choice, chicken parts, and 2 pounds of chicken. You can use a whole chicken or only parts, it doesn’t matter because the recipe makes allowances in the directions for extra amounts of either.

Use a sauce of your choice, try a soy sauce, barbecue sauce, or even a nice marinara sauce. I prefer the barbecue sauce. Also, make sure to have some onions on hand. Depending on how much you want to roast, depending on the size of your roasting pan will depend on how much onions you need.

Ingredients

  • 1 (3 pound) whole chicken, giblets removed
  • salt and black pepper to taste
  • 1 tablespoon onion powder, or to taste
  • ½ cup margarine, divided
  • 1 stalk celery, leaves removed

Instructions

Step 1

If you want to cut to the chase you can just cook the chicken in its own juices. I used my roasted chicken recipe and cut the breasts into 2 inch pieces. I seasoned both sides with pepper and onion powder, threw in some garlic and sauteed both sides over medium heat, covered with foil and cooked for about ten minutes. When the breasts were done I just removed the foil, cut into quarters, dredged in flour and placed in the roasting pan to cook.

Step 2

After the breasts were done I used my cast iron skillet to brown the chicken on all sides. I used fresh ground pepper and lots of fresh herbs and seasonings. My delicious chicken was done in less than 20 minutes. The meat was very easy to prepare and the flavor was perfect.

Step 3

A few weeks later my husband was in town and I needed to cook some roasted potatoes. Since I had just bought some sweet potatoes at the grocery store I decided to use them as the main ingredient in my baked potatoes.

Step 4

I didn’t bother to buy a airtight container to put the potatoes in, so when we went to bed I put the entire roasted chicken into our airtight container. When we got up the next morning we found that our potatoes had been completely ruined!

Step 5

So, this time around, I decided to not only use a whole chicken but I decided to add vegetables. Since I don’t love adding vegetables to my meals, I knew that putting them in my baked potato was going to be a huge fail. But, it was well worth the attempt. So, instead of roasting the potatoes over the top, I used the same oven I had used to roast the chicken. The result was amazing.

Additional Tips for Chicken Recipe

This is my favorite chicken recipe because I love adding spices to it. So, when you start looking for ways on how to roast a whole chicken, you will want to add pepper, oregano, garlic, onion powder, salt, and then let the mixture come to room temperature before turning it out.

If you don’t have the room temperature element, you can place the chicken in the oven at 350 degrees f and wait till the meat cooks thoroughly. Once the first side is done, you can flip and continue roasting the other side.

Add Extra Taste in Roasted Chicken Recipe

To make this recipe more interesting, you could also include some potato chips into the mix. If you have some fresh rosemary that you would like to use, also add it to the mix. It makes for a delicious meal and with a little creativity you can include things that you normally wouldn’t. These sweet potatoes have proven themselves to be a tasty addition to many chicken recipes. I have baked sweet potato-stuffed chickens before, so it definitely works in your recipe.
